A working farm has been part of Biltmore Estate since our beginning in 1895. That legacy continues today. Biltmore operates its farm and field-to-table program with estate-grown greens, berries, eggs, beef, and lamb, and partnerships with farmers in Western North Carolina for locally-sourced trout, cheese, beef, and pork for our restaurants.

After graduating from the Florida Culinary Institute, Shannon held key positions at high-profile resorts including The Garden Grove at Walt Disney World. In her current role, she’s responsible for everything from menu development to catering fantastic weddings on the Front Lawn of Biltmore House. Shannon enjoys using our freshest local and estate-raised ingredients.
