Tomato Gazpacho Recipe

Enjoy your own garden-fresh tomatoes with this lovely cool soup created by Bistro’s Executive Chef. Perfect for lunch with some crusty bread and olive oil, or as an elegant appetizer before dinner.

Tomato Gazpacho

Total time: 30 minutes

Ingredients:

  • Gazpacho Ingredients
  • 1 1/2 pounds fresh tomatoes
  • 2 red peppers – diced
  • 3/4 cup red onions – diced
  • 3/4 cup cucumber – peeled seeded and diced
  • 1/3 cup celery – diced
  • 1/3 cup fennel – diced
  • 2 tablespoons olive oil
  • 1/2 cup tomato juice
  • 1 clove garlic – minced
  • 1 1/2 tablespoons red wine vinegar
  • 3/4 teaspoon ground cumin
  • Salt and pepper to taste
  • Chipotle Crème Fraiche Ingredients
  • 1 cup crème fraiche
  • Juice and zest of 1 lime (reserve zest for garnish)
  • 1 tablespoon canned chipotle peppers – finely chopped
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions:

  1. Soup: Bring a medium pot of salted water to boil. With a small knife, remove each tomato core and cut a small X into the bottom of each tomato. Put water and ice in a large bowl; set aside. When the salted water comes to a boil, carefully drop tomatoes into the pot and blanch for 30 seconds. Remove tomatoes from the pot with a slotted spoon and place in the ice water. Allow a few minutes to chill. Once chilled, remove tomatoes from ice water and peel off outer skin. Cut tomatoes in half and remove seeds. Discard skins and seeds. Place tomatoes and all remaining gazpacho ingredients in a blender and process until smooth. For best results, store gazpacho in refrigerator overnight before serving.
  2. Chipotle Crème Fraiche: Place crème fraiche, lime juice, and chipotle peppers in a small mixing bowl. Mix thoroughly. Season to taste with salt and pepper.
  3. Serving Suggestion: Place approximately 1 cup of chilled gazpacho in each bowl. Garnish with a dollop of crème fraiche, some of the reserved lime zest, and a few cilantro leaves.

Biltmore Basil & Bee Cocktail

Biltmore Estate ingredients shine in this craft cocktail featuring Biltmore sparkling wine, honey, and basil!

When served at the restaurants on Biltmore Estate, this bright and herbal cocktail features hyper-local ingredients including Biltmore basil, honey, and sparkling wine, as well as Chemist Spirits, an Asheville favorite. Enjoy it year-round at our restaurants or follow this recipe to enjoy it at home.

Ingredients:

  • 1 ½ oz Chemist Spirits American Gin
  • 1 oz Honey-Basil Syrup
  • ¾ Fresh Lemon Juice
  • 2 Dashes of Orange Bitters
  • 2 oz Biltmore Sparkling Brut

*Honey Basil Syrup Recipe

  • ½ cup Biltmore Honey
  • ½ cup water
  • 1 cup Basil (use large leaves for making syrup and pluck smaller leaves for garnishes)
  • 1 Star Anise
  • 1 Lemon peel

Instructions:

  1. Prepare the Honey Basil Syrup: Simmer water and basil on low heat for 5 minutes. Add honey and stir to dissolve. Add star anise and lemon peel. Allow to cool before straining and setting aside.
  2. Add gin, lemon juice, and honey basil syrup to a cocktail shaker with ice. Shake until very cold, about 30 seconds.
  3. Strain the drink into a coupe or martini glass. Top with Biltmore Sparkling Brut and orange bitters. Garnish with small basil leaves and serve.

White Wine Mojito Cocktail

Summer is the perfect time to craft incredible cocktails featuring wines handcrafted here at Biltmore’s Winery in Asheville, North Carolina. And if you are looking for a lower-proof version of your favorites, simply switch out the spirit for a similar style of Biltmore wine. In the case of the white wine mojito below, we swapped the traditional rum for Biltmore Estate® Limited Release Sémillon. It makes a perfect “shady afternoon sipper” to enjoy while reading in the hammock (naps optional!).

Ingredients:

  • 2 ounces Biltmore Estate® Limited Release Sémillon
  • 2 ounces Italian lemon soda
  • ¾ ounces freshly squeezed lime juice
  • ¼ ounce simple syrup
  • 4 mint leaves

Instructions:

  • Muddle 4 mint leaves thoroughly in 2 ounces of Biltmore Estate® Limited Release Sémillon using a rough edge muddler. Add lime juice, simple syrup, and shake briefly on ice in a Boston shaker. Double strain into a martini glass and top with Italian lemon soda.
  • Serve straight up with a floating mint leaf as a garnish so ice does not overly dilute the cocktail. (Muddle different types of fruit to bring new flavors to this recipe—we give you a license to be creative!) Serves 1.

Fresh fruit and wine pair beautifully together, and warmer weather is the perfect time to experiment with your favorites and share the delicious results. Whether you’re serving craft cocktails on the patio, porch, or poolside, outdoor entertaining takes on a new meaning when you invite a special guest like rum. Yum!

Ingredients:

  • 1 bottle Biltmore Estate® Limited Release Dry Riesling
  • 8 ounces white rum
  • 1 cup blackberries
  • 1 cup fresh basil leaves (reserve some for garnish)
  • 2 lemons (sliced into thin wheels and halved)
  • Elderflower tonic

Instructions:

  • The day before you want to serve these cocktails, pour Biltmore Estate® Limited Release Dry Riesling and your choice of white rum into a pretty pitcher. Submerge several basil leaves and blackberries in the mixture and refrigerate overnight.
  • When ready to serve, use your favorite glassware and build each drink with ice, blackberries, basil leaves, and a couple of lemon wheels. Fill glasses a quarter of the way with elderflower tonic, and the rest of the way with the chilled wine and rum mixture. Enjoy! Serves 6.

Chenin Blanc Pineapple Slushies

This craft cocktail is a fun way to liven up a summer gathering. There’s a bit of nostalgia to any slushie drink, but this is definitely a grown-up version of the ones you remember from childhood!

Ingredients:

  • 8 ounces of chilled Biltmore Estate® Limited Release Chenin Blanc
  • 4 ounces chilled Plantation Pineapple Rum (used as a float)
  • 2 cups frozen pineapple chunks
  • 1 cup frozen mango chunks
  • 6 ounces pineapple juice
  • 3 ounces freshly squeezed lime juice
  • 2 ounces ginger syrup (recipe below)
  • 4 dashes Bittermen’s Tiki Bitters (or your favorite brand)
  • Ice

*Ginger Syrup

  • 1 cup of water
  • 1½ cups organic sugar
  • 1 medium ginger root, sliced

Instructions:

  • Tip: Put wine in the freezer 30 minutes prior to mixing these cocktails.
  • Prepare the Ginger Syrup: Place all ginger syrup ingredients in a pot and bring to a boil, stirring constantly so the sugar doesn’t burn. Remove from heat and allow to steep for 1 hour while it cools. Refrigerate for up to 2 weeks. Makes 1½ cups of syrup.
  • Craft the cocktails: Place all ingredients except rum in a blender. Blend until you have obtained a super slushy consistency. Pour into a glass, leaving room to float 1 ounce of Plantation Pineapple Rum on top, then garnish with extreme creativity! Serves 4.

Aperol Spritz

This lower-alcohol content cocktail is perfect for summertime sipping.

Summertime wouldn’t be complete without a classic Aperol Spritz, highlighting the bittersweet and citrusy flavor of the namesake liqueur. While traditionally made using Italian Prosecco, any dry sparkling white wine will do the trick.

Ingredients:

  • 3 oz. Biltmore Estate® Brut
  • 2 oz. Aperol
  • 1 oz. soda water

Instructions:

  • Chill all ingredients and fill a wine glass with ice to chill before you begin.
  • Add sparkling wine, Aperol, and soda water to the chilled glass and gently stir to combine.
  • Garnish with a freshly sliced orange wheel, if desired.

Tip: If you find the cocktail is too bitter or too sweet for your taste, you can easily adjust the ratio of ingredients.

At Biltmore, summer entertaining was a favorite pastime for the Vanderbilts and their guests.

From birthday parties in the Rose Garden to picnics on the grassy slopes of Mt. Pisgah, warm weather offered the perfect excuse to leave formal dining behind and enjoy a gathering in the great outdoors.

Chill, Grill, and Thrill

Inspired by their example, here are three easy “chill, grill, and thrill” steps to simplify your summer entertaining whether you’re in the kitchen, on the porch, by the pool—or wherever your plans take you.

1) CHILL

First, let’s start with an easy recipe for Grilled Skirt Steak with Tomatillo Salsa created by our Biltmore chefs to take advantage of summer’s bumper crop of tomatillos and heirloom tomatoes.

Grilled Skirt Steak with Tomatillo Salsa

Ingredients
2 pounds trimmed skirt steak (can substitute 4 ribeye steaks)

10 fresh tomatillos, husks removed and tomatillos quartered
8 cloves fresh garlic
3 green onions, roughly chopped
1 large shallot, peeled and roughly chopped
1 bunch fresh cilantro with stems and leaves
1 bunch parsley with stems and leaves
1 tablespoon fresh thyme leaves
3 tablespoons salt
1 tablespoon ground black pepper
1 teaspoon crushed red pepper (optional; use to taste)
1/4 cup extra virgin olive oil

Optional for serving: heirloom tomatoes, quartered; olive oil; fresh lemon juice, salt and pepper to taste

Method
The salsa doubles as a marinade for the steak, so prepare it first by combining tomatillos, garlic, onions, shallot, herbs, seasonings, and olive oil in a blender and blending until smooth. Reserve 1/2 cup of the tomatillo salsa for garnish.

Place steak and marinade in a large zip-top bag and allow to marinate for 1–3 hours in the refrigerator.

2) GRILL

Grill marinated steaks on medium-high heat for 3–5 minutes on each side for medium-rare. When done to your liking, remove steak from the grill and put it on a clean cutting board or platter to rest while you finish the rest of your preparations.

Tips for grilling

  • While the grill heats, prepare a green salad to accompany the meal.
  • After the steak is done, split and toast a couple of baguettes on the still-hot grill to serve with the salad (and soak up those heirloom tomato juices).

3) THRILL

Slice the steak and top with reserved salsa.

Dress quartered heirloom tomatoes with olive oil, lemon juice, and salt and pepper to taste. Arrange around the steak.

  • Bring the entire entrée to the table on the cutting board—no need to transfer to another dish.
  • Use a chiller filled with a mix of ice and water to keep your wine cool, especially if you’re eating outdoors.

Panna Cotta with Grapefruit Gelee
Our estate chefs have updated this traditional recipe to bring out the light, refreshing essence of summer.

Impress your guests with this twist on a classic Italian panna cotta. With its characteristic rich flavor and creamy texture, indulgence has never felt so simple.

Panna Cotta with Grapefruit Gelée

Gelée Ingredients
• ¾ cup fresh-squeezed grapefruit juice
• ¼ cup sugar
• 2 teaspoons (1 packet) unflavored gelatin powder

Panna Cotta Ingredients
• 3 cups heavy cream
• ½ cup sugar
• 7 teaspoons (3½ packets) unflavored gelatin powder
• 14 ounces goat cheese, softened

Preparation Instructions
• Create gelée in a small saucepan by combining the grapefruit juice, sugar, and gelatin powder. Whisk well and bring to a boil. Pour 1 ounce of the juice mixture into each of 6 (4-ounce) ramekins. Place the ramekins in the refrigerator to chill until firm, at least 30 minutes.
• Create panna cotta by combining heavy cream, sugar, and gelatin powder in a medium sauce pan. Whisk well and bring to a boil, then immediately remove from heat. Add the softened goat cheese to the mixture and continue to whisk until completely smooth.
• Divide the goat cheese panna cotta mixture evenly among the ramekins. Pour it over the firmly set grapefruit gelée and refrigerate until set, at least 1 hour.
• To serve: Run a knife between the panna cotta and the ramekin to release and invert onto a plate. If the panna cotta won’t come out, turn it upside down and run hot tap water over the bottom of the ramekin for 30–60 seconds, then gently tap onto a plate

Five fun facts about sparkling wine

For centuries, sparkling wine has enjoyed a certain mystery and allure. It was so enchanting, in fact, that some called it “devil’s wine” due to the effervescent bubbles.

Today, we still love the magical bubbles and appreciate the romance surrounding this delightful wine, and here are the fun facts to prove it:

  • There are 90–110 pounds of pressure per square inch in a bottle of sparkling wine–that’s more than three times the pressure in car tires!
  • Only sparkling wine from the Champagne region of France can officially be called “champagne.”
  • The grapes traditionally used in champagnes are Chardonnay, Pinot Noir, and Pinot Meunier.
  • Dom Perignon, a Catholic monk and avid winemaker, accidentally discovered sparkling wine when some of his wine re-fermented by chance. He thought it was ruined, but the rest is history.
  • There are an estimated 44 to 57 million bubbles in every bottle of bubbly.

Serving and storing sparkling wine

Sparkling wine may best be known as a celebratory drink, but we believe it’s the perfect everyday wine too. Whatever the occasion, enjoy your favorite Biltmore sparkling wines with these helpful tips:

  • Chill the bottle in the refrigerator prior to opening. The cold temperature helps preserve the bubbles when opening the bottle.
  • Sparkling wines are best when served at 33-40 degrees.
  • When opening a bottle of sparkling, hold the bottle at a 45-degree angle. Loosen the cage and hold the cork. Gently twist the cork until you hear a whisper of a pop.
  • Holding a towel over the cork when opening will help catch any spills that may occur.
  • Double-check your glasses to ensure the glass is free from detergent residue. A perfectly clear glass allows you to appreciate the bubbles.
  • After opening, all sparkling wines begin to lose their bubbles, so it’s best to drink them as soon as possible.
  • To store an open bottle of bubbly, you can use a special champagne topper. These metal caps with a rubber seal keep the bubbles fresh for the next time you want a glass.
  • Most sparkling wines are sold ready to drink, so don’t hang on to bottles in an effort to further “age” the wine.

What is a vertical flight and why is it so unusual?

Horizontal flights

Most wine flights are horizontal, meaning that you’re tasting several wines (often three or more) that are similar in nature (think “flight of geese” or “flight of stairs” and you’ll see how the name refers to a collection of similar things). This is a great way to learn more about wines in general and to discover interesting differences that you might not notice otherwise.

Vertical flights

What happens, then, when a flight goes vertical? That’s a very different type of tasting, and one that doesn’t happen every day.

For a vertical flight, you’ll be tasting three or more wines of the same varietal from the same maker in a series of different but close or sequential vintages. From varietal to vineyard to winemaker, the vintage is the only variable. Here are some of the things you can expect to experience:

  • Taste the obvious effects of how the wine matures over time
  • Note subtle differences made by the year’s weather in which the varietal was grown
  • Understand how aging affects the color, aromas, and flavors of the wine, and how it becomes more smooth as tannins and acidity decrease

A vertical flight is an exciting way to experience the terroir of a vineyard, the skill of the winemaker, and the characteristics of the varietal over time. It’s also a fun way for a small group of friends to learn more about a particular varietal together, so consider hosting a vertical tasting in one of two ways:

Youngest to oldest (most common vertical flight tasting style):

  • Discover the evolution of aging in a natural progression
  • Experience the varietal from a simpler, youngerphase to a more mature and complex one

Oldest to youngest (more unusual; offers different insights): 

  • Learn how decreasing levels of alcohol, acidity, and tannins in more mature wines affect your tasting experience
  • Keep your palate fresher longer by tasting younger wines last

Labor of Love: 40 Years of Christmas at Biltmore

Now in its fourth decade, Christmas at Biltmore has become a beloved annual tradition for both staff and guests of Biltmore. It is a holiday experience like no other, with more than 50 hand-decorated and styled Christmas trees gracing America’s Largest Home®—including the traditional 35-foot Fraser fir in the Banquet Hall—plus hundreds of wreaths, thousands of lights, and miles of garland that extend across the estate.

The celebration wasn’t always this elaborate—just ask Cathy Barnhardt, Floral Displays Manager. When she came to work for the estate 40 years ago, Christmas at Biltmore had happened exactly one time before. As part of her job she was asked to “do Christmas,” which amounted to decorating five trees inside Biltmore House.

“I went to work at Biltmore straight out of college, and I didn’t know much about Christmas decorating or Gilded Age décor,” Cathy recalled. “For my first Christmas here, my mom and I sat at a card table and made paper ornaments to hang on the trees!”

Making a change

After planning 40 and implementing 39 holiday seasons at Biltmore, Cathy retired this year. Developing and shaping the Floral Displays program at Biltmore has been her life’s work, and she leaves an indelible stamp across the estate, embodying Biltmore’s gracious hospitality with four decades of creative and elegant designs.

This year’s holiday theme is “A Vanderbilt Christmas,” a fitting finish to Cathy’s career because she always starts her planning with Vanderbilt stories.

“As a child growing up in New York, George Vanderbilt loved Christmas, and his journals reflect how his holidays were centered around traditions and family,” said Cathy. “And the fact he chose to open Biltmore to family at Christmas 1895, even though the house wasn’t completely finished, tells us how much he loved this season.”

Candlelight Christmas at Biltmore

As night falls over Biltmore, Cathy also loves to see Biltmore House begin to glow with candlelight and firelight, changing the mood and the experience. Candlelight Christmas Evenings allow guests to step back in time, experiencing the estate more like Vanderbilt’s guests did that first Christmas Eve 1895. On the Front Lawn, a lit 55-foot Norway spruce surrounded by 20 illuminated evergreens—70,000 lights in all—sets the tone. Soft luminaries line the walkway to the house.

“We started doing Candlelight in response to guests’ requests. At that time, we were only open Thursday, Friday, and Saturday nights,” Cathy explained. “We would work during the day and be at Candlelight at night. I was one of the candle lighters and got to listen to the musicians. Our guests loved it from the beginning.”

Through the years, the small gap between daytime and Candlelight Christmas Evenings remains one of Cathy’s favorite times. “The first evening I take a 30-minute break and simply walk through Biltmore House. It’s quiet, and I see all the planning come together and really look at decorations through our guests’ eyes,” she said. “I have loved that!”

Leaving a legacy

“When I started there were only 50 employees, now we have more than 2,000,” Cathy said.

Her team of seven full-time designers and 10 reserve staff members will continue Biltmore’s incredible decorating heritage, and she has full confidence in them.

“All these folks are awesome, creative people and great designers. Many of them have been here for 15–20 years! I’ve been blessed to work with them, and I will miss them,” said Cathy. “But what a wonderful opportunity this has been for someone like me who loves art and history and flowers!”

Christmas at Biltmore can be a lot to take in, especially for first-time visitors, so Cathy advises guests to start with the daytime experience, and then come back for Candlelight Christmas Evenings.
