Summer is here, and the calendar is filled with dates for entertaining family and friends. Now is the time for backyard barbecues, picnics, graduation parties, bridal luncheons, and neighborhood cookouts.

Smoked Salmon Bruschetta

• One baguette
• 1 tablespoon olive oil
• 4 ounces smoked salmon
• 1 ounce cream cheese
• 1 tablespoon finely chopped red onions (optional)
• 1 tablespoon finely chopped capers
• 2 ounces grated dill Havarti cheese

Set oven to broil. Slice baguette diagonally into six-inch slices. Brush olive oil on one side of the bread, and arrange on a baking sheet. Toast until bread turns brown, approximately 3–5 minutes.

Cut salmon diagonally into six thin slices. Blend cream cheese, onions, and capers together. Spread cream cheese mixture on the un-toasted side of the bread. Top with salmon and grated cheese. Return bread to broiler and cook until cheese melts, approximately 3–5 minutes.

Helpful tip: Although you can make this recipes in as little as 15 minutes, the bruschetta can also be prepared several hours in advance and refrigerated.
