A working farm has been part of Biltmore Estate since our beginning in 1895. That legacy continues today. Biltmore operates its farm and field-to-table program with estate-grown greens, berries, eggs, beef, and lamb, and partnerships with farmers in Western North Carolina for locally-sourced trout, cheese, beef, and pork for our restaurants.
Executive Chef Daniel Polk
Bistro Executive Chef Daniel Polk came to Biltmore as a Sous Chef at Stable Café in 2018, and then promoted to Bistro Executive Chef in June 2019. With more than 17 years of experience in the restaurant industry, Chef Polk has served in a variety of roles including Executive Chef at Back on the Beach in Santa Monica and Executive Chef at The Culver Hotel in Los Angeles, California; Sous Chef at DC Coast and Circle Bistro in Washington, D.C.; and Chef de Cuisine at the Hyatt Regency in Ekaterinburg, Russia, a 5-star luxury property.
